Each of the sticks indicates where oysters are located under the ice, and each twig shows where ice was cut and removed to access the oysters. Just before harvest, the ice is cut and a diver goes down to attach a line to the oysters. Then, the team shows up to haul the oysters up through the ice and bring them to the processing facility.
